Ingredients:
1 kg of mixed fish fillets, 2 onions or 2 leeks, 80 g of bacon, 4 rolls soaked in cream or crumbs, 2-3 eggs, lemon juice, fresh parsley, Liebstöckl, salt, pepper, nutmeg, curry, ½ tsp. mustard powder.

Preparation:
Cut mixed raw fish fillets in pieces and sprinkle with lemon juice, put it with bacon, onion or leek, parsley and the soaked buns into the mincer (fine disc). Knead the mass with the remaining spices and season to taste. This mass is well used to roast, bake or cook.

Former education: I finished the cook apprenticeship in 1976 and started my first season working in Fürberg. In 1195 I did advanced training to be a dietary cook, in 2000 further education to be head chef and in 2006 I ended the training to be a nutritionist.

My aim: Natural, well-balanced and healthy cuisine at high high-class level – no use of flavour enhancer, Gluten and glutamate (suitable for allergic people).

A lot of herbs, which complete our dishes, are from our in-house herb garden.

Himalayas salt and Ausseer natural stone salt must not be missing in our superior cuisine.
